Easy Breakfast Nachos

Breakfast nachos are life.

I had the idea for breakfast nachos after talking with my older brother who made nachos with Daiya Cheese for the first time for dinner this past Saturday. I was so jealous of his nachos but I had already eaten dinner! What was a girl to do?!

Nachos for breakfast, of course.

My husband and I discussed how we were going to make these epic nachos happen. French fries didn’t seem very ‘breakfasty’ and hash browns didn’t seem like they would give us exactly what we were looking for, and it being a Sunday morning, I didn’t feel like putting in the work of real potatoes. So, ding ding ding! Tater-tots it was!

 

The key to these awesome breakfast nachos is tossing the tater-tots in fajita or taco seasoning before baking. I cheated and used Old El Paso seasoning instead of mixing my own seasoning. I’m starting to think I should call this recipe ‘Lazy Breakfast Nachos’.

We topped the nachos with some Tofutti Sour Cream, some green onion and a side of sliced avocado. C’est délicieux!

Ingredients
Breakfast Nacos
Additional Toppings
Instructions
  1. Preheat oven to temperature required on your tater tots. Toss frozen tots in fajita or taco seasoning and bake. Save a small amount of seasoning to toss in with your vegetables.
  2. Wash and chop bell pepper, onion, tomato, jalapeños and daiya cheese.
  3. Combine in bowl with your extra fajita or taco seasoning.
  4. Set oven broiler to high and adjust oven rack to the third row from the top.
  5. Place tater tots on a prepared baking pan. Top with vegetables and cheese.
  6. Bake for roughly 10 minutes or until cheese is properly melted.
  7. Serve with desired toppings.
