Blueberry banana muffins are magic.

This blueberry banana muffin recipe seriously does magic things. Like, makes my house smell amazing and creates a beautiful silence while my kids devour them.

And I’m a mega fan of anything that creates more than 5 minutes of quiet in my house.

So last week, on a particularly loud day, I decide to whip up a batch of these awesome blueberry banana muffins.

The secret to the moist but not doughy blueberry banana muffin is the Tofutti Better Than Sour Cream. I find so many blueberry muffin recipes tend to be dry or go bullet hard after one day, and Tofutti  Better Than Sour Cream is the perfect solution. Now, it absolutely does not make these muffins healthy but it does make them delicious and let’s be real, that’s more important.

These muffins are delicious with a hot cup of tea. Or in my case, with a lukewarm cup of coffee.

Ingredients
Instructions
  1. Preheat oven to 400 degrees and lightly grease your muffin tins.
  2. In large bowl, mash two bananas.
  3. Add melted butter, milk, sour cream and sugar to bananas. Combine well.
  4. Add two cups of flour, baking powder and salt to wet mixture. Lightly combine.
  5. Add blueberries and combine. Be careful not to over-stir.
  6. Place dough in your greased muffin tins and bake for 15-20 minutes or until toothpick comes out clean if poked.
