A Healthier Vegan Cornbread.

Last week, when I was preparing my Warm Coconut Corn Chowder, I knew I needed a cornbread to go with it. So I started scouring Pinterest to find the perfect fluffy, moist vegan cornbread. Enter a wonderful recipe from The Pretty Bee.  I was looking for something quick and with simple ingredients and Kelly’s recipe hit the mark!

So Kelly’s recipe was already a healthier recipe that calls for applesauce in place of half of the butter. An awesome choice that was part of what made me choose the recipe. But then I looked in my fridge and I didn’t have an applesauce! At that point I was like, well crap, I guess husband isn’t getting any cornbread with his chowder tonight.

But then I spotted some peaches.

And my brain wondered, perhaps I could puree a peach to achieve the same result as the applesauce. I mean, it makes sense right? So I grabbed a large peach and set out on a new baking adventure! I boiled the peach for 5 minutes. This made the skin of the peach peel off quick and easily, plus ensured a nice pureed texture.

The peach puree turned out so well! It adds a little extra sweetness to the cornbread without taking away from the traditional taste of cornbread. Next time, I’m going to try to omit the butter entirely in favour of two pureed peaches. I’ll do an update if that turns out to be successful!

Instructions
  1. preheat oven to 350 degrees and lightly grease 9 inch pan.
  2. boil peach for 5 minutes, remove skin and puree in blender until perfectly smooth.
  3. in large bowl, combine flour, cornmeal, baking powder, sugar, salt and baking powder.
  4. add peach puree, melted vegan butter, and non-dairy milk.
  5. add walnuts and stir until combined. pour into prepared pan.
  6. bake at 350 degrees for 25-30 minutes.
