Vegan Enchilada Lasagne

Vegan Enchilada Lasagne is a favourite meal in our house.

And, thankfully, it is one of those meals that my children happily eat without an argument! I originally found this recipe online and memorized it years ago so unfortunately I can’t link you to the original recipe. Forgive me!

This is a dish for plant-based and meat-eaters alike. It’s always a crowd pleaser! As such, you can almost always expect to see this vegan enchilada lasagne served in my house if I have non-vegans coming to dinner. Every plant-based eater I know understands the stress of wanting to satisfy a meat-eater with a meatless meal. Trust me, this drool-worthy vegan enchilada lasagne will be devoured by all!

Instead of traditional enchilada filling, this lasagne is filled with spinach, corn, black beans, green onion and tons of Daiya Cheese Shreds. Also, always make sure to steam the spinach to wilt it before adding the spinach to your lasagne.

And you might be thinking there is no way you can get your kids to eat the spinach. Well let me tell you, that all you need to do is smother anything with this enchilada sauce and your kids will eat it. It is that good!

Ingredients

Instructions
Enchilada Sauce
  1. Warm olive oil on medium heat in a medium sized pot.
  2. Add tomato paste, spices and flour and combine.
  3. Add vegetable stock and hot sauce. Stir to thicken and remove from heat.

  1. Preheat oven to 350 degrees.
  2. Steam your spinach in a sauce pan until wilted. Remove from heat. Loosely chop and add to a large bowl.
  3. Wash and drain black beans. Add to spinach.
  4. Add fresh or defrosted corn, chopped green onion and Daiya Cheddar Style Shreds to bowl and combine.
  5. Lightly oil lasagne pan. Spread a thin layer of enchilada sauce on bottom of pan. Cover with two tortillas.
  6. Add a layer of spinach and black bean mixture. Cover with another layer of tortillas and spread remaining mixture evenly.
  7. Top with two more tortillas and cover with remaining enchilada sauce. Be careful not to overflow your pan!
  8. Spread an even layer of Daiya Pepper Jack Shreds onto the enchilada sauce.
  9. Bake for 25 minutes.
