Warm Coconut Corn Chowder

After I had some amazing soup at a friend’s house last week, I’ve been totally inspired to try more soups and chowders this month. A good corn chowder is one of my favourite things to eat. And my Warm Coconut Corn Chowder is one of my favourite summer to fall recipes. I don’t know about you, but as the seasons change I love mixing up our meals to reflect the changing weather. This chowder is perfect for moving into autumn. The coconut milk and bright yellow colours are reminiscent of summer, the pepper and hearty texture welcome the fall.

Sorry the pictures aren’t the best, but I made this chowder on a whim and wasn’t exactly set-up to do pretty photos.  I figure the poor photos will be forgiven once everyone has tried this awesome chowder. Anyway, as much as we may be transitioning into fall, global-warming still has the earth producing crazy hot temperatures. A healthy, one pot, stove top dinner was exactly what I needed this week. Plus, lots of leftovers!

Ingredients
Instructions
  1. Prepare potatoes and place in large pot with vegetable stock, celery, onion, garlic, pepper, salt, thyme and sage.
  2. Bring to boil and reduce to medium heat for 15 minutes.
  3. Add can of coconut milk and combine.
  4. Place up to half of the soup in blender along with jalapenoes. Blend until smooth and return to pot.
  5. Serve with a squeeze of fresh lime juice.
Recipe Notes

I was conservative with my spice recommendations. I personally tend to add more black pepper and hot peppers to my chowder. I also used a can of coconut milk, you can also use regular low-fat coconut milk but it may lessen the coconutty flavour.
